Keto Cookies made from Pork Rinds ? Yup, you read that right. Our Unseasoned Pork Rind Crumbs are like magic that work for both sweet and savory recipes.
» 1/2 c Peanut Butter Powder (54g powder, 4T water)
» 1 Scoop Peanut Butter Vanilla protein powder, or plain vanilla
» 3/4 Cup Unseasoned Pork Rind Crumbs
» 54g Lupin Flour
» 1/4 C Erythritol
» 1/3 C Brown sugar substitute
» 1 Egg
» 1 stick Softened Sweet Cream Butter
» 3/4 tsp Baking Powder
» 1/4 tsp Baking Soda
→ Set oven to 375.
→ Mix butter, PB, and both sweeteners until creamy and a bit fluffy. Add in the egg. Mix.
→ Add in all of your flours, PKG crumbs, baking powder and soda. Mix until combined.
→ Use a cookie scoop to plop into 1" balls. (These won't really spread much at all)
→ Bake for 9 minutes, then press down in center to create a divet for your chocolate. Allow to cool completely.
→ Make chocolate topping and scoop a spoonful into each divet. Allow to set. This starts to set quickly, so be sure you are ready to use it before making the chocolate.
